Chao Ga (Vietnamese Chicken Porridge)

This is a classic Vietnamese soul dish great on rainy days or when you are feeling under the weather. The ingredients are very simple, and it is easy to make. I love making this for my family, here is my own version of this dish. Try it and tell me what you think :o) Also to note, when I cook, I never use measuring cups, I do it by eye and taste. So please add the seasonings according to your own preference.

Ingredients
1 Whole Chicken (Organic or Yellow Chicken is best)
2.5 Cups of Rice
3 Sprigs of Cilantro
2 Sprigs of Green Onions
1 Ginger
Fish Sauce (Flying Lion brand, this is a MUST)
Pepper

Directions
Remove the insides of the whole chicken
Place chicken in large pot and fill it up with water until it covers the whole chicken
Boil gently for about 45 minutes
Remove chicken and add rice and ginger (largely sliced)
Let it boil for 30 minutes, adding more water if neccesary (add enough water according to the viscosity of your preference)
Shread the chicken apart with hands, remove all bones
Add about 7 tablespoons of fish sauce, make sure to stir and taste
Add chicken in soup
add chopped cilantro and green onions
serve!
